Taste Of Home Garden Veggie Lasagna
I’ve tried making veg lasagna in the past with watery results. I’m guessing that roasting the veggies ahead of time helped draw out some of their moisture because this lasagna kept it’s shape so well and was not watery at all. Chopping up mushrooms and mixing in with the sauce gave thickened and flavored it nicely. I strictly kept to the exact recipe on the first try. I’ll add spinach next time..I made this for supper tonight with the abundance of vegetables from my garden. It was excellent! The only thing I did differently was use green pepper instead of mushrooms since I’m not a fan. My husband thought it was a nice change from traditional lasagna, which he loves..I concocted this quick and easy recipe to use up some of the abundant fresh produce from my garden. When I made a batch to share at a church potluck, I received lots of compliments..This is my favorite lasagna recipe. It’s a bit of work but it’s not hard to make. It is just as rich and flavorful as any meat based lasagna, in my opinion it’s even tastier than any meat lasagna I’ve had. Try this recipe..
